You may love a very delicate Pinot Noir, and a delicate Pinot is perfect for Turkey, or a Cabernet Sauvignon for roasts or steaks but when you start dealing with the sugars in fruit sauces and or the cream in the string bean casserole, you need a wine with a bit more palate coating attributes, or enough acidity to cleanse the palate at every bite.
Sparkling
N.V. Perelada Brut Reserva-Spain ($12.95)
The Perelada is very crisp with good acidity. Excellent lemon flavors that work great with shellfish or spicy stuff like salsa. The middle is big enough to carry to the table and compliment the main course. The Perelada has received some seriously good point scores in the various wine publications. If you are serving a lot of people you will love both the quality and the price.

1999 Chateau Carignan Prima-Bordeaux-France ($40.99)
So you want your Bordeaux with the holiday meal? That is not a problem, but if the wine is to compliment your dinner as opposed to overpowering it you will need one with a little age. From the right bank of Bordeaux we offer you the 99 vintage of Prima. This wine is very big and very smooth, 8 years of perfect cellaring have seen to that. The Prima is all smoky plums with hints of spice, smoke and hints of black cherry at the finish, turkey and ham - no problem, rich enough for sweet potatoes. It’s incredible with the dark meat, these and just a few pairing ideas from Lynda and me. We would love for you to come in and discuss your plans so we can help you get the perfect pairing.
